Dawn Eckhoff

In high school, Dawn Eckhoff aspired to be a Pediatric Nurse Practitioner, and she has been one for over 20 years now. She earned her Bachelor of Science in Nursing from the University of South Florida and her MS in Nursing from the University of Florida. Her interest in conducting research with obese children and their parents led her to the doctoral program in nursing here at UCF. Currently, Eckhoff is involved in research with Susan Quelly, PhD that will hopefully impact how children think about glucose and activity.

Eckhoff is a recipient of the Michaud Foundation scholarship (2015) and the Hugh F. and Jeannette G. McKean Endowed Scholarship (2016). She is also a member of Sigma Theta Tau, the Nursing Honor Society. At UCF, she loves the interactions with other students and faculty, particularly her mentor Steven Talbert, PhD. “He is very patient and also pushes you to always think outside the box.”

Eckhoff expects to complete her degree program in 2017 and intends to continue practicing as a nurse practitioner part-time while also conducting research and teaching at UCF.
